HMR Stuffing

This HMR stuffing recipe is perfect to make to have or bring to your Thanksgiving dinner! Enjoy this to support staying “in the box” for Decision Free or Healthy Solutions, or have as a lower calorie option in Healthy Shakes or Phase 2!

INGREDIENTS

1 HMR Mushroom Risotto Entree

1 HMR 500 Chicken Soup

1 HMR Multigrain Hot Cereal

1 tsp Bell’s Seasoning

DIRECTIONS

1. Heat entree as directed on package; make cereal as directed on package.

2. In a bowl, mix heated entree + cereal together. Add packet of soup (dry) and Bell’s Seasoning; mix.

3. Spray a baking dish with non-stick cooking spray; spread mixture into pan.

4. Bake at 375 degrees for 30 minutes.

5. Serve and enjoy!

Optional: addition of diced vegetables (carrots, onions, celery) for Healthy Solutions, Healthy Shakes or Phase 2 plans).

Fruity Risotto

INGREDIENTS

1 HMR Mushroom Risotto Entree

1 cup chopped pineapple

1/2 cup water chestnuts

1 tsp soy sauce

DIRECTIONS

  1. Add all ingredients to a bowl; mix to combine.
  2. Microwave for 2 minutes.
  3. Remove and enjoy!

  1. Heat Mushroom Risotto Entree as directed on package.
  2. Make Multigrain Hot Cereal as directed on package.
  3. In a bowl, mix Risotto and Cereal together. Add one packet of dry HMR 500 Chicken Soup mix and seasoning. Stir to combine.
  4. Spray a baking dish with non-stick cooking spray; spread mixture into pan.
  5. Bake at 375 degrees for 30 minutes.
  6. Enjoy as a single 550 calorie serving or bring to your next get-together for a yummy side dish!

Stroganoff Risotto

A simple double-entree recipe especially delicious if you enjoy mushrooms!

Ingredients

  • Beef Stroganoff with Noodles Entree
  • Mushroom Risotto Entree

Directions

  1. Mix entrees together in an oven-safe dish and bake for 25 minutes at 350F then enjoy!
  2. If you don’t have 25 minutes, heat entrees in microwave for 1 minute each then mix and eat.

Stuffed Mushrooms

This is one of those in-the-box recipes you can bring to event and share with non-HMR people. It’s so good!

Ingredients

  • 1/2 medium onion, chopped
  • 1 clove garlic, minced
  • 1 HMR Mushroom Risotto entree
  • 2 small packages of white mushrooms, stems removed

Directions

  1. Preheat oven 400F. Spray a cookie sheet with oil spray and set aside.
  2. Preheat a small pan on medium heat and lightly spritz with oil spray.
  3. Sautee onion and garlic for 2-3 minutes. Add HMR Risotto to mixture and stir until completely mixed. Remove from heat.
  4. Fill the mushroom caps with risotto mixture and bake for 8-10 minutes. Serve warm.

Mushroom Risotto Latkes

This is a simple recipe that you can adjust to your liking. Use this recipe to make yourself either four large latkes or up to 20 small ones- depending on your preferences. Enjoy!

Ingredients

  • 1 HMR Multigrain Hot Cereal (optional: remove dried fruit before first step)
  • 1 HMR Mushroom Risotto Entree
  • 1/4 cup warm water

Directions

  1. Mix the water and cereal together. Allow to sit for 1 minute.
  2. Stir in the entree.
  3. Heat a non-stick skillet with medium heat. Use a light amount of oil spray.
  4. Spoon cereal-risotto mixture into the pan at desired sizes and flatten slightly with a spatula.
  5. Cook for 3 minutes on one side and flip when the bottom has a brown, crispy crust.
  6. Cook for another minute or two and serve warm.
